I am starting a new Monday feature here at Pink…Like the Color. I enjoy cooking. Mind you, I don’t get fancy and if the recipe calls for more than five ingredients or a lot of chopping, I skip it. I do like trying new quick and easy meals for my family though and thought I would share some of my favs with you each Monday with Momma Cooks Monday.
Chicken Fettuccini
You need:
2 boneless skinless chicken breasts cut into bit sized pieces
1 lb box fettuccini pasta
1 stick butter
1 clove garlic
1 15-ounce container ricotta cheese
1 pint whipping cream
1 teaspoon salt
1 cut grated parmesan
1/2 cup fresh parsley – chopped
2 green onions – finely chopped
Directions
1. Boil noodles according to package.
2. Melt butter in a large skillet over low heat. Saute chicken until no longer pink. Add garlic and saute for 1 minute. Remove chicken and set aside.
3. Add ricotta cheese, whipping cream, salt, and parmesan. Stir well. Cook over low to medium heat for 10 minutes stirring often. Stir in parsley and green onions. Add chicken back in.
4. Serve over pasta.
Serve with a salad and you have a great meal!
